How to make Garam Masala
DIY Garam Masala is not only is it quick & easy but you can alter the spice level depending on your liking. Using just a few spices, it can be stored in your cupboard ready to add to dishes such as curries, stews, soups. I love to make roasted vegetables and use this mix as a seasoning.
What is Garam Masala?
Garam Masala is a blend of ground spices mainly coming from Indian cuisine and can be used in many dishes to deepen the aromatic flavour.
How to make Garam Masala at home
Depending on what you have in the cupboard or what is cheapest at the supermarket, you can use pre-ground spices or grind the whole spices yourself.
List of ingredients;
Black pepper, cumin, cardamon, coriander, cinnamon, nutmeg and chilli.
Adjusting flavours of Garam Masala
One of the reasons I started to make things like this at home was so I could control the flavours and ingredients. For this Garam Masala recipe, it has aromatic mild flavours. However it is easy to increase or decrease quantities of certain spices as you prefer.
If you increase the Cardamom levels for a stronger aroma spicy-sweet flavour. Or perhaps adjust the Cinnamon for a deeper sweet, woody and fruity flavour. Change the quantity of Cloves for a more sweet and spicy taste, cloves can be very dominating flavour. For a zesty and herby flavour, alter the Coriander level or add more Cumin for a warmer and nuttier flavour. For the chillies, increase or decrease the quantities here depending on your preference for spice. The quantities are in tbsp and grams for reference.
TOP TIP: If using whole cardamon pods; save the skins in a small spices bag and leave in your dishtowel or underwear draw for fragrant smell!

Garam Masala vs Curry Powder
The difference between these two spice blends is that Garam Masala is a traditional spice blend coming from Indian and is used in a lot of authentic Indian dishes. It is brown in colour and has a stronger sharp flavour.
On the other hand, curry powder was created by the Brits as a spice blend to add Indian flavours to their cooking. This is usually yellow from the turmeric and brings a milder and sweet flavour.
How to make Garam Masala spice mix
- 2 tbsp Black Pepper 15g
- 2 tbsp Cumin 12g
- 2 tbsp Cardamon 12g
- 2 tbsp Coriander 10g
- 1 tbsp Cinnamon 8g
- 1 tbsp Nutmeg 7g
- 1 tbsp Chilli 8g
- If using pre roasted and ground spices; add all the ingredients into a jar or container and shake well to mix!
- If using roasted whole spices; add all ingredients to a pestle & mortar and grind until fine powder. Then combine and shake well to mix.
- Store in airtight jar or container in dry cupboard. Will last for 1 year however flavours start to lessen over time.
