Lasagna alla Bolognese

I love making this recipe, the flavours of complement each other so well. The aubergine are steamed to give such a soft texture, then cooked in with fried chill, garlic, sage and lemon zest to create a delicious moreish flavour. This recipes skips the complexity of layering making it fun to put together then finished with a crunchy melted cheesy & toasted almond topping. This recipe can easily be made gluten-free by replacing the pasta and the recipe gives good tips on substitute ingredients too. Be sure to use a vegetarian parmesan cheese too.
02: Veggie Lasagne by BBC Good Food
If you are looking for a straight-forward meat-free lasagne, this is certainly one of the best. It is made from a mix of roasted vegetables which creates a beautiful soft vegetablely ragu-like mix. The reason I love this recipe is because it tastes delicious and is a great way to use up any vegetables; i’ve tried this with carrots, & aubergine and whatever else is sitting in the back of the fridge! Definitely one to try!
03: Spinach and Ricotta Lasagne with Pine Nuts by Delia Online
The combination of spinach and ricotta is an absolute winner! This recipe is full of flavour and is a great twist on a veggie lasagne, using four different cheeses it is hard to go wrong with the addition of toasted pine nuts add a delicious crunch, baked to perfection with a crispy topping of mozzarella and parmesan (be sure to use a vegetarian parmesan!).
04: Vegan Rainbow Lasagne by Rainbow Nourishments
When I first came across this recipe, I knew I had to try it. The different colours make it look amazing yet each layer has so much flavour, the pumpkin and beetroot layers give that winter comfort. Cleverly using tofu to give a ricotta-like texture and for the bechamel sauce I used almond milk and skipped using vegan cheese, the yeast and milk creates that creamy texture the cheese wasn’t missed. This recipe requires time and patience due to all the layers, the recipe has some tips to saving time so is definitely worth trying!
05: Polenta Lasagna with Portobellas and Kale by Fat Free Vegan Kitchen
This recipe uses polenta instead of pasta, a genius vegan and gluten-free substitute. Mushrooms and Kale are a great healthy alternative used in this recipe but still have the winter-comfort flavours. I used bagged kale and a jar of passatta which made it pretty quick to throw together. For the ‘cheese’ sauce, tofu and tahini is used, or cashew butter. A really unique way of making a delicious vegan lasagne.
